Bengali Singara

Ingredients:
  1. Boiled Mashed Potatoes -(2 medium sizes)
  2. Flour/Maida -(150 gram)
  3. Chopped Green chilli and Garlic -(1 tbsp)
  4. Roasted Peanuts -(15 pc)
  5. Grated Ginger -(1 tsp)
  6. Salt to taste
  7. Turmeric Powder -(1 tsp)
  8. Chaat Masala -(1 tsp)
  9. Garam masala powder -(1/2 tsp)
  10. Chopped Coriander -(1/2 cup)
  11. Baking Soda -(1 pinch)
Method:
  1. At first, Boil the potatoes and mash it well.
  2. Then add oil in a pan and heat it well.
  3. Once the oil is well heated add chopped green chilli, garlic and grated ginger, fry it for 1 min on medium flame.
  4. After that, add roasted peanuts along with turmeric powder, chaat masala, garam masala powder and salt to taste.
  5. Fry the masala for 1 to 2 min on medium flame.
  6. Then add boiled mashed potato and mix it well.
  7. Now add chopped coriander and mix it again.
  8. Stuffings is ready let it cool down completely.
Making Dough:
  1. In a mixin bowl take all purpose flour.
  2. Then add oil along with salt and a pinch of baking soda in it, mix it well.
  3. Add water gradually and make a semi soft dough.
  4. Rest the dough for 15 min.
  5. After 15 min make same sizes dough balls from the dough.
  6. Then, take one dough ball and roll it into puri/luchi shape.
  7. Now cut it into two equal parts.
  8. Take one part and fold it into a cone shape. Apply water to fix the joints and press it gently.
  9. After that, fill it with stuffings and gently press it inside.
  10. Apply little water on the edges and seal it well. Make sure the edges are seal properly.
  11. Repeat the process to make remaining singaras.
  12. Now singaras are ready to fry.
  13. Heat sufficient oil in a pan on low flame.
  14. Then add one by on singaras into hot oil and fry it fon low flame untill it turns golden.
  15. Flip it every 5 min. It well take approx 15 min to fry one batch.
  16. Once the singaras turns golden then take it out from the pan.
  17. Serve it with sweet tamarind chutney or tomato ketchup.
