Bengali Veg Fried Rice
Ingredients:
  1. Boiled basmati rice -(2 cups)
  2. Carrot -(1 cup)
  3. Capsicum -(1 cup)
  4. Cauliflower -(1 cup)
  5. Beans -(1 cup)
  6. Fresh/Frozen Peas -(1/2 cup)
  7. Cashew nut -(10-15 pc)
  8. Raisin -(10-15 pc)
  9. Ghee -(1 tbsp)
  10. Sugar -(1-2 tbsp)
  11. Salt to taste
  12. Whole Garam Masala -
    {Cardamom=2, Clove=2, Cinnamon Stick=1, Bay leaf=1}
  13. oil -(3 tbsp)
Method:
For making rice:
  1. At first, wash the basmati rice thoroughly for 3 to 4 times.
  2. Then soak it for 30 min.
  3. Now turn on the flame and put a large vessel on it.
  4. Then add sufficient water in it and let it boil.
  5. Once the water starts boiling then add soaked rice.
  6. After that add oil and salt to taste, cook it till the rice cooked 90% on medium to high flame.
  7. Once the rice cooked completely then turns off the flame and drain out the water.
For making fried rice:
  1. Turn on the flame, put a pan on it and heat sufficent oil in it.
  2. Once the oil is heat then add chopped cauliflower and fry it for 1 to 2 min on high flame.
  3. After that add chopped carrot,beans and capsicum, fry them for 1 to 2 min on high flame.
  4. Now add some salt to taste and soy sauce, mix it well.
  5. After that, take out the vegetables from the pan.
  6. Now place another pan on the flame and add some ghee in it, let it heat.
  7. Once the oil is heat then add whole garam masala, cashew nut and raisins, saute it for few seconds.
  8. Now add boiled rice along with fried vegetables and salt, mix it well.
  9. Cook it for 3 min, keep stirring occasionally.
  10. After 3 min turns off the flame and let it cool for 3 to 4 min.
  11. Serve with chicken kosha,mutton kosha,aloor dum.
