How to Cook Chicken Bhuna Khichuri.

Khichuri Preparations :

1. Basmati rice - 1.5 cup
2. Roasted moong dal - 1/2 cup
3. Masoor dal - 1/2 cup

Chicken preparation :

1. Chicken - 600 gm
2. Onion - 2 medium size
3. Ginger-Garlic-Green chilli paste - 4 tbsp
4. Oil - 5 tbsp
5. Dry red chillies - 2 no.
6. Bay leaves - 2 no.
7. Crushed whole garam masala
8. Cumin seed - 1/2 tsp
9. Salt to taste
10. Kashmiri red chilli powder - 1/2 tsp
11. Cumin powder - 1 tsp
12. Turmeric powder - 1/2 tsp
13. Chopped tomato - 1 medium size
14. Garam masala powder - 1 tsp
15. Slit green chillies - 2 no.
16. Ghee - 1 tsp
17. Cashew and raisins - 1/4 cup
18. Fried onions - 1/2 cup

Method:
1. Heat a pan then add 1/2 cup of moong dal, dry roast for 3 min on medium flame, keep stirring otherwise the dal will be burnt.

2. Now wash 1.5 cups of basmati rice, 1/2 cup of moong dal and 1/2 cup of masoor dal thoroughly.

3. Soak rice and dals for 30 min.

4. Wash chicken pieces under running water thoroughly.

4. Heat 5 tbsp of oil on medium flame, now tempered with 2 dry red chilli, 2 bay leaves, crushed whole garam masala and 1/2 tsp of cumin seed and fry it for few seconds.

5. Add sliced onion and fry it for 3 min on medium flame.

6. Now add 4 tbsp of ginger-garlic-green chilli paste and fry it for 3 min on medium flame.

7. After 3 min add 1 tsp of cumin powder, 1/2 tsp of turmeric powder, 1/2 tsp of Kashmiri red chilli powder, chopped tomato and salt to taste. Mix it well.

8. Add little water so that the spices do not burn, stir it well. Cover it and cook for 3 min on medium flame.

9. After that, add washed chicken and mix it well with spices.

10. Now cover it and cook it for 10 min on medium flame.

11. After 10 min opens the lid and stirs it once. Cover it and cook it for another 15 min. Cook the chicken total 25 min on medium flame.

12. Now take out the chicken pieces from the gravy and keep it aside.

13. Then add washed and soaked rice and dals, Mix it well.

14. Fry it for 3 min on medium flame.

15. After 3 min add 5 cups of hot water as we took 2.5 cups of rice and dals that's why we will add 5 cups of water. Give a nice stir.

16. Now add 1/2 tsp of garam masala powder, 2 slits green chillies and salt to taste. Mix it well and leave it to bringing a boil.

17. After that, add cooked chicken pieces and 1 teaspoon of ghee, 1/4 cup of raisins, 1/4 cup of cashew nuts. Mix it gently because rice is very soft now.

18. Cover it with a lid and cook it for 10 -15 min on medium to low flame.

19. After 10 min opens the lid and check it once the rice and dals and cooked properly or not, if not cooked properly the cook it for another 5 min.

20. Then add 1/2 tsp of garam masala powder and 1/2 cup of fried onions, mix it gently.

21. Turn off the flame and serve with salads.
