Chicken Chaap


Chicken Chaap is a very popular mughlai cuisine. It consists of dishes developed in the medieval Indo-Persian cultural centres of the Mughal Empire. Chicken Chaap is one of the easiest recipe for me. It's processing is too easy and the taste is amazing. Anyone can make this recipe. Let's see how it is made.

Chicken Chaap

Ingredients:
  1. Chicken -(500 gram)
  2. Onion Paste -(1 cup)
  3. Curd -(1 cup)
  4. Ginger-Garlic-Green chili Paste -(1 cup)
    {Ginger= 2 inch, Garlic Clove= 15, Green chilies=10}
  5. Cashew nut and poppy seed paste -(3 tbsp)
    {Cashew nut=15, poppy seed=1 tbsp}
  6. Nutmeg and mace powder -(2 pinch)
  7. Kashmiri red chili powder -(1 tbsp)
  8. Salt to taste
  9. Garam masala powder -(1 tsp)
  10. Rose water -(1 tsp)
  11. Kewra water -(1 tsp)
  12. Meetha attar -(3 drop)
  13. Ghee -(3 tbsp)
  14. Saffron water -(3 tbsp)
  15. Roasted Besan (gram flour)/ Sattu -(2 tbsp)
Method:
For roasting Gram flour:
  1. At first, turns on the flame and put on a pan.
  2. Then add gram flour in it and roast it on medium flame.
  3. Keep stirring continuous otherwise it will burn.
  4. After 3 to 4 min turn of the flame and let it cool down completely.
For marinating the chicken:
  1. At first, take chicken pieces in a mixing bowl.
  2. Then add ginger-garlic-green chili paste, onion paste, cashew paste and poppy seed paste.
  3. After that, add whisk curd and salt.
  4. Then add garam masala powder along with kashmiri red chili powder, nutmeg powder, mace powder, saffron water,ghee, kewra water,rose water and 2 drops of meetha aatar.
  5. Now mix all ingredients very well.
  6. Rest it for minimum 1 hour in room temperature.
For making gravy:
  1. After 1 hour turn on the flame and put a pan on it.
  2. Now add oil and ghee, let it heat well.
  3. Once oil and ghee are heat then add marinated chicken pieces without marinating mixture, fry it for 10 min on high flame.
  4. After 10 min add remaining mixture, mix it well.
  5. Cover and cook it for 15 min on medium flame, keep stirring occasionally.
  6. After 15 min opens the lid and add roasted gram flour, stir it well.
  7. Cover and cook it for another 10 min on medium flame. Keep stirring occasionally.
  8. After 10 min opens the lid and check it once, (if the chicken pieces are not cooked well then cook it for another 10 min).
  9. Now turns off the flame and serve it with biryani, rumali roti or naan.
