Egg Curry Dhaba Style

Ingredients:
  1. Boiled eggs - 4 pieces
  2. Chopped onion - 2 medium sized
  3. Ginger-garlic-green chili paste - 2 tbsp
  4.  Tomato paste - 1 medium sized
  5. Cashew nut powder - 1 tbsp
  6. Cumin seed - 1 tsp
  7. Cinnamon sticks - 1 no.
  8. Clove - 3 no.
  9. Cardamoms - 3 no.
  10. Turmeric powder - 1/2 tsp
  11. Garam masala powder - 1/2 tsp
  12. Kashmiri red chili powder - 1 tsp
  13. Cumin powder - 1 tsp
  14. Chopped coriander leaves - 1 cup
Method:
  1. At first, boil the egg and after boiling peel them well.
  2. Now turn on the flame and put a pan on it.
  3. Then add oil and let it heat.
  4. Once the oil is heat then add kashmiri red chili powder, turmeric powder and salt, mix it well on low flame.
  5. Then add boiled eggs and fry it for 3 to 4 min on low flame.
  6. After frying take it out from the pan and keep it aside.
  7. Now take a wok and add some oil in it, let it heat.
  8. Once the oil is heat then add whole garam masala and cumin seed, saute it for few seconds.
  9. After that, add chopped onion and fry it on medium flame till it turns golden brown.
  10. Now add ginger-garlic-green chili paste,mix it well and fry it for 1 to 2 min on medium flame.
  11. Then add tomato paste,cumin powder,turmeric powder,kashmiri red chili powder and salt to taste, mix it well.
  12. Cover and cook it for 2 to 3 min on medium flame.
  13. After 3 min opens the lid and stir it once.
  14. Then add cashew nut powder and garam masala powder, mix it well.
  15. Fry it for 2 min on medium flame.
  16. After that add required water water in it and stir it well,let it boil.
  17. Once it starts boiling then add fried eggs,stir it.
  18. Cover and cook it for 5 to 6 min on medium flame.
  19. After 6 min opens the lid and checks it once.
  20. Now add chopped coriander leaves and mix it well.
  21. Turn off the flame and serve it with roti,paratha,rice etc.
