Fulkopir Paratha
For making Stuffing:
  • Oil - 2 tbsp
  • Chopped onion - 1 small size
  • Grated cauliflower - 1 cup
  • Ginger-Garlic-Green chilli paste - 2 tbsp
  • Salt to taste
  • Cumin Powder - 1/2 tsp
  • Turmeric powder - 1/2 tsp
  • Garam masala powder - 1/2 tsp
  • Dry mango powder - 1 tsp
  • Chopped coriander leaves - 2 tbsp
For making Dough :


  • Wheat flour - 1.5 cup
  • Oil - 2 tbsp
  • Salt to taste
  • Water as required
  • Oil for frying.


For making Stuffing:
  1. Grate the cauliflower florets with the help of a grater. Keep it aside.
  2. Heat a pan and add 2 tablespoons of oil.
  3. Once the oil heat well then add 1 small size of chopped onion and fry it for 2 mins on medium flame.
  4. After 2 min adds grated cauliflower and mixes it well.
  5. Now add 2 tablespoons of ginger-garlic-green chilli paste, salt to taste, 1/2 teaspoon of cumin powder, 1/2 teaspoon of turmeric powder, 1/2 teaspoon of garam masala powder, 1 teaspoon of dry mango powder. Mix it well.
  6. Fry it for 5 to 6 min on medium flame.
  7. After 6 min adds chopped coriander leaves and mixes it well. Now turn off the flame and let it cool down completely.
For making dough:


  1. In a mixing bowl take 1.5 cups of wheat flour/ Aata, add salt to taste and 2 tablespoons of oil.
  2. Combine it well. Add water gradually and make a semi-soft dough. Knead it for10 min.
  3. Add 2 tablespoons of oil and again knead it for 5 min.
  4. Once the dough is prepared then cover and leave it to rest it for 10 mins.
  5. After 10 min kneads it once and makes equal sizes of balls.
  6. Now take one ball and hold the dough ball between your fingers and press it with your thumbs to make bowl/Katori shape.
  7. Put the stuffing inside and bring the edges together to seal it. Roll it.
  8. Dust it and roll it into a paratha.
  9. 2nd process: Take a dough ball and dust it with flour then roll it. Then take the prepared mixture and put it at the centre of rolled dough, gently press the stuffing inside and bring the dough edges together to seal it.
  10. Dust it with flour and roll it into a paratha.
  11. Turn on the flame and heat a tawa on high flame. Put the paratha on tawa. Cook it for 3 min then flip it and cook. Apply oil and fry it.
  12. Cook it from both sides properly, keep flipping.
  13. Once the paratha cooked properly on both sides take it out from the tawa.
  14. Serve it with curd/pickle/ tomato ketchup.
