How to preparePav Bhaji

Ingredients:

1. Boiled cauliflower florets - 6 pieces.
2. Boiled potatoes - 3 medium sizes.
3. Boiled Carrots - 2 medium sizes.
4. Chopped onion - 1 large size
5. Chopped capsicum - 1 large size
6. Fresh/Frozen peas - 1/2 cup
7. Chopped tomatoes - 1 large size
8. Chopped green chilli - 2 no.
9. Giner-Garlic-Green chilli paste - 2 tbsp
10. Cumin seed - 1/2 tsp
11.Turmeric powder - 1/2 tsp
12. Red chilli powder - 1/2 tsp
13. Pav bhaji masala - 1.5 tbsp
14. Salt to taste
15. Kasuri methi - 1 tbsp
16. Chopped coriander leaves
17. Garam masala powder - 1/2 tsp
18. Butter - 5 tbsp
19. Pav bread - 2 pieces
20. Water as required.

Method:

1. In a pressure cooker add washed cauliflower, potatoes and carrots and boiled with 2 whistles on medium flame.

2. Now mash all the boiled vegetables, keep it aside.

3. Heat a pan, then add 3 tablespoons of butter and heat it well.

4. Add 1/2 teaspoon of cumin seed and saute for few seconds.

5. After that, add 1 large chopped onion and sprinkle some salt mix it and saute for 1 min on medium flame.

6. After 1 min adds 2 chopped green chillies and 1 large capsicum, cover it and saute it for 2 min on medium flame.

7. After 2 min opens the lid and stir once, veggies are got soft now add 2 tablespoons of ginger-garlic-green chilli paste, 1 large chopped tomato, 1/2 teaspoon of turmeric powder and 1/2 teaspoon of red chilli powder. Mix all the ingredients very well.

8. Add 1/2 cup of frozen green peas or fresh green peas (If you used fresh green peas then you can boil and mash it with other vegetables).

9. Add salt to taste and 1.5 tablespoons of pav bhaji masala and mix all ingredients very well. Cover it and cook it for 5 min on medium flame, keep stirring in between.

10. After 5 min opens the lid and gives a nice stir, now add mash boiled vegetables and mix it with the help of a masher.

11. Now I'm gonna add 1.5 cups of water to adjust the consistency, stir it well.

12. Add 1 tablespoon of Kasuri methi and mix it well. Then add chopped coriander leaves, 1 tablespoon of butter and 1/2 cup of water to adjust the consistency, stir it again.

13. Cover it and cook it for 15 min on medium-low flame. Stir occasionally or else it will get stuck under the pan.

14. After 15 min opens the lid, the vegetables are well cooked. Now add 1/2 teaspoon of garam masala powder and mix it well.

15. Our bhaji is ready, now keep it aside.

16. Heat a pan and add 1 tablespoon of butter, add some chopped coriander leaves and toast the bread well.

17. Serve the Pav Bhaji with a slice of onion and lemon.
