Sheer Kurma


Sheer Kurma

Ingredients:
  1.  Vermicelli - 1 cup  

  2. Almonds - 10 no. 

  3. Cashew - 10 no 

  4. Dates - 2 no. 

  5. Chopped Pista - 2 tbsp

  6.  Charoli or Chironji - 2 tbsp

  7.  Raisins - 2 tbsp

  8. Saffron - 1 pinch

  9.  Kewra water - 1 tbsp

  10. Nutmeg powder - 1 pinch

  11.  Sugar - 6 tbsp

  12. Ghee - 1 tbsp

  13.  Milk - 1 lit. 

Method:
  1. At first, soak all dry fruits at over night, then peel it and chopped it into small pieces.
  2. Now turns on a flame and put a pan on it.
  3. Then add some ghee and let it heat.
  4. Once ghee is heat then add chopped dates along with almonds,cashew nuts, chironji/almondette, raisins and pista.
  5. Fry it for 2 min on medium flame. keep stirring continuously.
  6. After 2 min take out from the pan and keep it aside.
  7. Now In the remaining ghee add vermicelli and roast it for 2 to 3 min on medium flame. keep stirring continuously.
For making sheer kurma:
  1. After 3 min turns off the flame and take it out from the pan.
  2. Now heat a pan and add milk, let it boil.
  3. Once the milk starts boiling then take out 1 cup of milk and soak the saffron stands in hot milk.
  4. Now boil the milk on medium to high flame for 10 to 15 min, keep stirring in between.
  5. After 15 min add roasted vermicelli and dry fruits, mix it well.
  6. Cook it for 10 to 15 min on medium flame, keep stiring in between.
  7. After 10 min add sugar, saffron milk, crushed cardamoms and kewra water, mix it well.
  8. Boil it for 5 min on medium flame.
  9. After 5 min add nutmeg powder and mix it well.
  10. Now turns off the flame, let it cool down.
  11. Sprinkle some dry fruits on it and serve.
